Peanut Butter Cookies

Yield: 2 dozen cookies
Oven Temperature: 325 degrees F

Ingredients:
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup shortening
1/2 cup brown sugar
1/2 cup white granulated sugar
1 egg
1/2 cup peanut butter
1 tablespoon water
1/2 teaspoon pure vanilla extract


Peanut Butter Cookies

Directions:
Line 2 baking sheets with parchment paper. In a mixing bowl, cream the white sugar, brown sugar, and shortening until fluffy. Add the egg, vanilla, and peanut butter and beat well. Next, add the remaining dry ingredients and mix until incorporated.

Scoop rounded tablespoons of dough onto cookie sheets, spacing them 2 or more inches apart (to allow for the cookies spreading as they cook). Using the tines of a fork, press a crosshatch pattern into the top of each cookie. Be careful not to press to hard, as dough will be soft and you don't want to go through the cookie. If the fork sticks to the dough, try dipping the fork in a bit of flour before indenting the cookies.

When you are finished, place the cookies in a 325 degree oven for 15 - 20 minutes or until edges become golden brown. Remove cookies from the baking sheets and allow them to cool on a wire cooling rack.
