Spritz Cookies

Yield: 6 - 7 dozen
Oven Temperature: 375 degrees F

Ingredients:
1 cup shortening
3/4 cup white granulated sugar
1 egg
1 teaspoon pure almond extract
2 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
Paste food coloring (optional)
Sprinkles, dragees, and small candies for decoration

Directions:
Note: These cookies are traditionally made with a cookie press. If you don't have a cookie press, you can roll the dough into 1 inch balls and flatten the balls to about 1/4 inch in thickness before baking. Though perhaps not as decorative, they will still taste delicious!

With electric or hand mixer, cream shortening and sugar well. Beat in egg and almond extract. Gradually blend in the dry ingredients.

Add your choice of paste food coloring to the dough and mix thoroughly. Start by adding small amounts of coloring and then gradually add more to achieve desired color. A toothpick or the end of a table knife both work well for dipping out the food coloring.

Next, pack your cookie press with a portion of your dough and form your cookies on ungreased cookie sheets. These cookies do not spread much, so you can fit many cookies on a sheet. If you want to add sprinkles, jimmies, dragees or other accoutrements, now is the time to do so.

Bake your cookies in a 375 degree oven for 10 - 15 minutes or until edges just begin to color faintly. Remove cookies from cookie sheets and allow them to cool on a wire rack.
