Brownies

Yield: 16 2" brownies
Oven Temperature: 350 degrees F

Ingredients:
2 1/2 blocks of baking chocolate
1/2 cup butter
2 eggs
1 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup nuts (optional)

Brownies

Directions:
Melt baking chocolate and butter in a small saucepan over low heat or in the microwave (on a low power setting); cool the mixture. Beat eggs and sugar together. After chocolate mixture has cooled down a little (you don't want it to cook the eggs), add the chocolate and the melted butter to the eggs and the sugar. Stir to incorporate. Add the flour, baking powder, and salt; mix until just blended. If you want nuts in your brownies, stir them in now.

Pour the brownie batter into a greased 8 x 8 inch pan and bake in a 350 degree oven for 30 - 35 minutes. Do not over bake; brownies should appear slightly underdone when you remove them from the oven.

Optional: For added decadence, spread the brownies with chocolate frosting (see recipe below).

Chocolate Frosting

Ingredients:
3 tablespoons butter
3 ounces baking chocolate
3 cups powdered sugar
1/4 teaspoon salt
1/2 cup milk
1 teaspoon pure vanilla extract

Directions:
Melt butter in small saucepan; add chocolate and stir constantly over very low heat until melted. Pour into small mixing bowl and add the remaining ingredients. Beat mixture until well blended. Chill frosting until it's of spreading consistency (10 - 15 minutes). Spread over completely cooled brownies and enjoy!
